Interview with Carlos Bosch, CEO of Grupo GastroPortal

Carlos Bosch, the creative mind behind El Portal, Manero, Mar Mía and more, keeps growing his GastroPortal universe — where dining is just part of the experience.

Madrid, Alicante, Marbella... what’s leading the way now?

Madrid is our highlight today, with Manero Marqués de Cubas. It’s a “gastro-lifestyle” venue mixing bar, bistro, caviar bar and club — unique in Madrid and already the city’s hot spot.

How is this Manero different?

Each Manero has its own character. This one is three times bigger, with over 120 menu options and exclusive semi-private rooms named after figures like Carlos III or Julio Iglesias. We wanted an unforgettable spot — and it’s working.

And Marbella?

Our biggest challenge yet, inside the iconic Hotel Don Carlos. Alongside Nicky Beach, we’re bringing Manero and our new Campari Bar Manero, inspired by Milan’s aperitivo vibe. The area is still developing but has huge potential.

How about Alicante?

After 16 years, El Portal is still the city’s culinary icon. It stays fresh through constant updates. Manero has also helped revitalise areas like Plaza Balmis — locals and tourists love that balance of evolution and tradition.

Plans abroad?

We tested Lisbon with a pop-up — a success. Paris tempts us too, but we want steady growth. 2025 and 2026 will focus on careful expansion.

How do you keep quality consistent?

A team of executive chefs constantly refines dishes and ideas. We believe in ongoing improvement — so every visit feels even better than the last.

Carlos Bosch builds not just restaurants, but stories where flavour and atmosphere blend naturally.
